Kinilaw

Kinilaw is one of the best Filipino delicacies and it’s my favorite dish. Kinilaw is a raw cubed tuna fish like Bariles/Malasugue. The best thing about Kinilaw is that, if you prepared it right after the catch of the fish because of the freshness of the fish. The ingredients and preparation is very simple; wash the fish with water once and with coconut wine (tuba) or vinegar then drain. Put it in a bowl and sprinkle on the top the chopped ginger and onions. Squeeze a kalamansi and add again a coconut wine (tuba) or vinegar and the hot red chilies. And a salt to taste and mix it, you can also add slices of cucumber and that’s it. Most Filipinos especially social drinker love kinilaw for their pulutan.
