Chinese Fried Rice

2 eggs, beaten 2 tablespoons chopped green onion
1/4 cup oil 1/8 teaspoon salt
1/2 cup cooked green peas 2 tablespoons soy sauce
2 cups cooked rice


Scramble eggs in 2 tablespoons of oil, breaking up into small pieces. Set aside.
Saute remaining ingredients in remaining oil for about 10 minutes, stirring frequently. Mix scrambled eggs, cook and stir for 5 more minutes.
Yield: 4 servings.
