Bulgur With Egg

1 cup bulgur wheat
3 cups hot water
4 tablespoon cooking oil
2 teaspoons minced garlic
1 tablespoon minced onion
12 cups water
3 eggs, scrambled till golden brown
4 teaspoons salt
1 teaspoon vetsin
4 tablespoons minced onion

Soak wheat in hot water for 2 hours. Saute garlic and onion. (Reserve part of fried garlic for garnish). Add soaked wheat and water, bring to a boil, cook 30 minutes on high fire, stirring to avoid sticking. Add scrambled eggs, sliced into strips, vetsin and salt. Cook 15 minutes on medium,7 minutes on low. Serve hot with fried, minced garlic and fresh green onion on top. Makes 12 servings.
